Arkansas Heart Hospital: Fish Dish for Lent


WIth summer right around the corner, a lot of people are out trying to get their bodies in shape! The Arkansas Heart Hospital is with us today with a good meal so that you can start eating healthy! 

Baja Pan Seared Salmon

Serves 4


1 pound salmon fillets, cut into 4 servings

1 tablespoon Tex Mex seasoning

1 cup tomato, diced

1 clove garlic, minced

1 tablespoon fresh cilantro

1/4 cup yellow bell pepper, diced

Zest and juice of 1 lime

1 teaspoon jalapeno, diced


1. Prepare salsa by combining vegetables, lime juice and zest, cilantro, and garlic in a small bowl.

2. Coat salmon fillets with the Tex Mex seasoning.

3. In a large sauté pan sprayed with cooking spray over medium-high heat, sear salmon fillets 3 to 5 minutes depending on thickness each side.

4. Top with salsa and serve.
