The AR Heart Hospital is in the studio with Chef Mark Elliotte, he is cooking an amazing, heart-healthy meal that is EASY for you to make for the whole family.
2 1/2 lbs. russet potatoes, baked or grilled, cut into large chunks
2 ribs celery, diced
1 jalapeno, stem and seeds removed, diced
1/4 cup red onion, diced
4 hardboiled egg whites, diced
1/8 tsp smoked paprika
1/4 tsp liquid smoke
1 1/2 cups nonfat Greek yogurt
2 tbsp cider vinegar
2 tbsp low sodium mustard
1 tbsp artificial sweetener
1 tsp fresh ground black pepper
1/4 tsp celery seed
1. In a large bowl mix the potatoes, celery, jalapeno, red onion.
2. In a small bowl whisk together yogurt, cider vinegar, sweetener, mustard, garlic powder, pepper, and celery seeds.
3. Pour dressing over potato mixture and mix well. Gently stir in egg whites. Cover and refrigerate for at least 1 hour.
4. Sprinkle with smoked paprika on top for garnish and serve.
